Baked Apple Taquitos

Easier than pie! These Baked Apple Taquitos are reminiscent of apple pie, but a lot easier to make.

Ingredients

4 small- to medium-sized apples (Granny Smith, Pink Lady, Honeycrisp or Braeburn), peeled and sliced as uniformly as possible

1 tbsp lemon juice

1/2 tsp cinnamon

pinch or two of nutmeg

2 tbsp maple syrup

2 tbsp butter

3 burrito-size flour tortillas, each tortilla cut into pie-shaped thirds

raw sugar for sprinkling

Instructions

  1. Preheat oven to 350 degrees.
  2. Add apple slices to medium-sized bowl and pour lemon juice over them, then stir to cover all of the slices.
  3. Sprinkle 1/2 teaspoon of cinnamon and pinch or two of nutmeg over apples and stir again.
  4. Next pour 2 tablespoons of maple syrup over the apples and stir again.
  5. Heat 2 tablespoons of butter in pan over medium heat. Once butter is mostly melted, add apples and stir.
  6. Cook for 8-10 minutes, stirring occasionally. Apples are done when then are tender.
  7. Scoop 2 tablespoons of apples into each tortilla wedge. I use the pointed end as the top, and then spoon apples in a line down from there. Sprinkle filling with a touch of sugar and wrap tortilla around filling.
  8. Place taquito seam side down in baking dish. Repeat until glass dish is full (in a single layer) or when you have used up all of the apple filling.
  9. Bake for 10-12 minutes. Tortillas should be crispy and a little brown, but not burned.
  10. Eat on their own or with your favorite ice cream.

Notes

  • The smaller the apple slices, the faster they will cook and become tender in the pan. Be mindful of this to avoid overcooking.
  • I found that less tortilla is optimal. By cutting the tortillas into thirds, like pieces of pie, I can roll them into perfect sized taquitos.

Tips

  • If you prefer a sweeter dessert, add more maple syrup or sprinkle a little more sugar before wrapping taquitos.
  • You could also brush some melted butter over the tops of the taquitos and then sprinkle with some cinnamon or sugar and cinnamon.
  • You could make a batch, but don’t bake them but freeze them in the glass bakeware. When ready, they can go straight into the oven (without thawing) and bake at 350 degrees for about 12 minutes.
